Although it occurs about a month before the first day of summer, for me Memorial Day has always signified the unofficial start of summer and, of course, barbecue season! I love how good weather, good friends and good food always lead to a good time. All you need is a little outdoor space and a grill to get the party started.
The best thing about summer barbecues is that it is extremely easy to stay on track with your paleo lifestyle. All you have to do is say no to the bun and pile up on the fruits and veggies.
Easier said then done, huh? That’s why I’ve prepared a fool-proof menu that won’t hack your paleo lifestyle and is sure to please non-paleo eaters as well!
Appetizers:
Step away from the potatoe chips and dip. Who made those the official food of the barbecue anyway? Instead of filling your bowls with Doritos and potato chips, why not try making homemade plantain chips (pictured above). These salty crisps pair perfectly with a paleo taco dip, just leave out the beans and cheese.
The Meal:
The key to a main course at a barbecue is that it should cook on the grill and be easy to eat. That’s why I opt for Cilantro Chili Chicken Skewers or Chili Lime Chicken Bites. However, burgers are a staple at most summer barbecues. Although typically paleo compliant, instead of serving a traditional beef patty, why not spice things up a bit with this recipe for Jalapeno Chicken Burgers?
All of these recipes are not only paleo friendly, but they are also compliant with the Whole Life Challenge and Whole30.
Dessert:
When the weather is warm, I like to serve a dessert that is cool and refreshing. Since strawberries scream summer, try out these Strawberry Creamsicles (pictured above) or a super simple bowl of Berries and Coconut Cream!
